What is one of your favourite meals on a rainy spring day? Not to much work, but equally hardy, nutritious and satisfying?
Meatballs! At least for us.
These amazing little ( or large) gems of deliciousness are our family fav. Made with our own raised beef, veggies & herbs from our garden and a few simple seasonings. I have made these half and half with pork as well. It gives them a lighter taste. Feel free to add or minus ingredients to your own tastes, or give these a try. You won't be disappointed.
They are versatile and can be cooked using many mediums. When oven baking, you can cook them only with a little olive oil, covered for 40-45 min or until cooked through. Or, I usually add a jar of our puréed tomatoes & a sprinkle of Italian seasoning in between to make it a fast meal.
Sautéing on the gas top, takes more attention, turning every few minutes, but the result is a caramelized, sticky outer shell on them from the bbq sauce, that will make you want to eat them right out of the pan! Side dishes with these are endless. They can also be made a head of time and frozen, and thrown into a slow cooker with your choice sauce for a quick weekday feast!
You'll need:
2 lbs lean ground beef, fresh or thawed
1 large onion, finely chopped
4-5 garlic cloves, minced
1 tbsp soy sauce
1/4 cup Bullseye Chicken n Rib BBQ sauce
Seasoning salt & pepper, to taste
1 large egg
Just enough homemade bread crumbs to pull the mixture together.
Place ground beef in a large metal bowl. I prefer metal only because it seems to pull the ingredients together better and I feel it is more sanitized in the dishwasher, not absorbing any meat juices in plastic, but it's absolutely up to you.
Add remaining ingredients on top, minus the bread crumbs, and incorporate with your hands to make sure it is thoroughly mixed. Slowly add bread crumbs, just until it starts to pull together. You don't want to add to much or they will taste more like bread :)
Form into 2-inch balls, but size is your choice. If I am placing in the oven, they will be that size. Place a tbsp of olive oil on the bottom of the baking dish, and arrange with equal space between. Add pureed tomato sauce and seasonings. Cover, and bake for up to 45 minutes, or until side of the dish begin to caramelize.
Serve hot with garlic bread slices for dipping!
*If pan frying, I prefer slightly smaller ones as they will cook faster, and are caramelized all around while being cooked through. Time varies depending on size of pan and meatballs.
